A gentleman phoned me mid week in a panic. He needed help in 4 days with a very important dinner party for a good friend’s birthday. I assured him we would be able to help.
He wanted delicious and sexy and fun food to go with great wines. We were to present at a plated meal with full table service.
The menu we decided on fit the bill perfectly. The food was both unique and each course was pared to complement their wine list.
The first course was Parmesan frico with herb goat cheese and toasted almonds. It was served with
a Sauvignon Blanc from the Loire Valley.
The next course was Cake Salés which is a classic savory loaf made with smoked ham, cured green olives and Gruyere garnished with a Dijon mustard sauce, pared with Coppola Sofia Riesling 2013.
The salad was a brie pane with a lavender and honey sauce which I chose to blend with delicious fresh fruit, asparagus and heirloom carrot pieces. The salad course was paired with a Pinot Noir from the Sonoma Coast.
The main course was fillet with a classic Espagnole sauce, garlic potato towers, caramelized cremini mushrooms and roasted asparagus and a lemon butter sauce. This paired perfectly with Turnbull Cabernet Sauvignon 2013.
