 Easy potato salad with turkey bacon and jalapeno kick

Try this easy potato salad without mayo, it’s a spicy warm potato salad I created this week for a client. It was delicious and I will definitely be making it again. All ingredients are organic and available at most grocery stores.  This dairy free Easy Potato Salad is very simple to make in under 45 minutes, Including  time for the potatoes to cook.  The great thing about this recipe is that the coconut oil and jalapeno pepper work together with the sweet onions and turkey bacon to make a flavor that is a little sweet and a little spicy. It will go perfectly with anything on your BBQ menu this weekend.  I hope you love it!
 
 
 

 

Easy Potato Salad with Turkey Bacon and Jalapeno

 
Serves 4
 
Ingredients:
6 medium red potatoes, diced  with skin
5 slices lean turkey bacon, cooked and chopped
1 medium sweet onion, chopped’
1 large jalapeno pepper, seeded and minced
2 teaspoons kosher salt, to taste
1/4 cup cilantro, chopped
1/4 cup coconut butter spread, (in the dairy section) or use 2 tablespoons butter and 2 tablespoon coconut oil.
1/3 cup unsweetened light coconut milk ( added a little at a time)
 
Directions:
 
In a large pot, add the diced potatoes to cold water.  Add a little salt to the water to add flavor if desired and to speed the boiling time.  Cover until the water boils. Check after 15 minutes to see if the pieces are tender.
 
While the water is boiling, prepare all of the other ingredients. Place the onion and pepper in a skillet and brown with a little coconut oil on medium high.  Add the crumbled cooked bacon and cilantro.
 
After the potatoes are tender, drain them in a colander and rinse with cool water to remove excess starch.  Pour into a bowl and toss with the coconut butter spread or butter with coconut oil, until the melted.  Add in the other ingredients and gently toss. Add the coconut milk if the potatoes are too dry.  Only add enough to moisten them.
 
Test for seasoning and serve warm.
 
MMM delicious, dairy free and egg free, you won’t miss their flavor either.  This is so packed with  flavor from the richness of the coconut, bacon and jalapeno flavor, you probably won’t want a regular mayo salad again.
