As a personal chef, I am always pleased when my clients appreciate my food. But when my skills as a chef are needed to help a client recover from an illness, that is truly a satisfying experience.
Some history here is in order. I was contacted by my client’s doctor to see if I would be able to help. I have a good knowledge of nutrition. I am always educating myself about natural food’s healing powers. I am familiar with the Paleo Autoimmune protocol. So I agreed to work with her client on a weekly meal service.
I worked closely with the doctor, to prepare menus for my client. The are a couple of challenges associated with Lyme Disease Diets. They are very restrictive. Patients often lose their sense of taste for savory and or tangy flavors and loss of appetite results. No gluten is allowed. Organic and GMO free ingredients are critical, which goes without saying. Reduction sauces, stocks packed with nutrient dense flavor, proteins, vegetables and a few fruits.
Sparking my client’s interest in eating is critical because his Lyme Disease was misdiagnosed for two years. Leaving this normal, healthy, active man with severe weight loss, chronic fatigue, pain and a low functioning immune system.
Working with a list of 40 ingredients, appetizing to my client and on the “approved list” is a welcome challenge. He missed spicy flavors so this passed week I focused on Tortilla Soup. No chips or cheese allowed. I prepared stock with all organic chicken, vegetables, herbs and spices. The stock simmered on low heat. The nutrient value stays at the highest level, when slowly cooked. The stock was then strained. Sauted aromatic organic vegetables and slow roasted free range breast of chicken were added. Organic tomatoes and roasted poblano peppers were added with a slice of lime and cilantro for color. You be the judge, I felt healthier just making it!
If you have a serious disease, work with your doctor. But, pay attention to nutrition. Whole food, organic and properly prepared, can give the body tools to heal itself.
