Fresh Pasta Day: Fresh Pasta, Alfredo Sauce, Marinara Sauce, Meatballs and Italian Ice
Skills to master: The safe zone, cutting board safety, menu timing, knife basics, metric measuring, making a sofrito, working with semolina flour, hand crank pasta machine skills, enhancement with herbs, making sauces, melding flavors and fresh fruit desserts, plating and presentations

Parm and Polenta Day: Chicken Piccata, , Creamy Polenta, Caprese Salad and Peach Polenta Upside Down Cake 
Skills to master: Breading, braising, sauce reduction, thickening sauces, balancing flavors, wet cooking polenta, stovetop safety, knife skills, simmer, cast iron baking and recipe development.

Hand Made Gnocchi Day: Potato Gnocchi, Herb Butter Sauce, Caprese Salad and Cannoli; 
Skills to master: Dry heat and wet heat method, recipe formulas, mise en place, smoke points, stovetop safety, simmer, sauté, piping skills and chocolate dipping and grocery list preparation 

Homemade Soup and Zabaglione Day: Roasted Tomato Basil Soup, Fresh Herb Focaccia and Zabaglione with Cream 
Skills to master: Stove top safety, roasting vegetables, sauté, simmer, soffritto, Maillard reaction, yeast proofing, kneading, knife cut skills, making custard desserts, team recipe challenge preparation

Team Challenge Day: Pizza Challenge Competition
Skills to present: Stove top safety, recipe execution,  mise en place skills, blending skills, skills, knife skills, plating and presentation skills 

The price for membership is $295.00 now. Customers in CA will be charged 7.75% tax.
