White chili recipe ~ full of flavor, quick and easy
This is a white chili recipe that is made with turkey, white beans and a little red pepper flake for kick. It is a perfect blend of spicy and savory. I created this recipe for my weekly client who cannot have tomatoes or bell peppers because of food allergies. He loves spicy food and I wanted to make something different for him this week. I was inspired by my recipe for Cassoulet while shopping at Fraizer Farms on Tuesday. So this recipe for white chili is based upon the French bean stew classic. I added sausage, like the classic but I turned up the heat with jalapenos and crushed red pepper. I didn’t add any chili powder so the broth is clear like the Cassoulet. I hope you enjoy trying it. My client always requires organic ingredients for health reasons, but feel free to make substitutions on this white chili recipe.
White Chili Recipe
Ingredients:
1 tablespoon extra virgin olive oil
1 large sweet onion, diced
3 large jalapeno peppers, minced with seeds
3 large garlic cloves, minced
1 pound lean ground turkey
1 pound lean andouille chicken or spicy Italian turkey sausage
3 15 ounce cans cannellini or great northern, no salt added- rinse well before using
1 tablespoon cumin powder
2 teaspoons kosher salt
1/2 teaspoon crushed red pepper flakes
1 large poblano pepper, seeded and diced
1 quart chicken stock, low sodium
1/4 cup cilantro leaves, chopped
Lime for garnish, if desired.
Directions:
In a large dutch oven on the stove, heat oil over medium heat until it shimmers, add the chopped onion and jalapeno peppers, saute until onion is translucent, about 8 minutes. Add the garlic and continue to cook until just fragrant, another minute. Remove from the pan.
Add a little more oil and brown the turkey, remove from the pan. Slice the sausage and add to the pan, brown but be careful not to burn. You have been building a fond for flavor, you don’t want to mess this up now. So keep it on medium heat. Patience here is the key to lots of flavor. Add the cumin and blend well.
Add back all of the ingredients and the remaining ingredients except the cilantro. Simmer on low for 1 hour. Your sauce will thicken. Just before serving, taste for seasoning and add salt if desired. Add in the fresh cilantro and slices of lime for garnish if you wish.
